Ingredients:

For the crust:

1 and 1/4 cups all-purpose flour
1/2 cup unsalted butter, chilled and diced
1/4 cup granulated sugar

3-4 tablespoons ice water

For the filling:

4-5 cups thinly sliced apples (such as Granny Smith or Honeycrisp)
1/2 cup granulated sugar
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
1 tablespoon lemon juice

For the topping:

1/2 cup all-purpose flour
1/2 cup packed light brown sugar
1/2 cup rolled oats
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, chilled and diced

Instructions:

Preheat your oven to 375°F (190°C) and grease a 9-inch tart pan with a removable bottom.

For the crust, in a food processor or a large bowl, mix together the flour, sugar, and salt. Add the chilled diced butter and pulse or cut in with a pastry cutter until the mixture resembles coarse crumbs.

Add the ice water, one tablespoon at a time, and pulse or mix until the dough comes together. Form the dough into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

On a floured surface, roll out the chilled dough into a circle slightly larger than your tart pan. Press the dough into the bottom and sides of the pan, trimming off any excess dough.

For the filling, in a large bowl, toss together the sliced apples, sugar, flour, cinnamon, nutmeg, salt, and lemon juice. Spread the apple mixture evenly over the crust in the tart pan.

For the topping, in a medium bowl, mix together the flour, brown sugar, oats, cinnamon, and salt. Add the chilled diced butter and cut in with a pastry cutter or fork until the mixture resembles crumbly streusel.

Sprinkle the topping evenly over the apples in the tart pan.

Bake the tart in the preheated oven for 40-45 minutes, or until the crust is golden brown and the apples are tender.

Remove the tart from the oven and let it cool in the pan for about 10 minutes. Then carefully remove the sides of the tart pan.
