Ingredients:

1 pound large shrimp, peeled and deveined
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp cayenne pepper (optional)
1 cup cold club soda or sparkling water
Vegetable oil, for frying
Lemon wedges, for serving
Cocktail sauce or tartar sauce, for serving

Instructions:

In a large mixing bowl, whisk together the flour, baking powder, salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper (if using).
Gradually stir in the cold club soda or sparkling water until a smooth batter forms.
Heat vegetable oil in a deep fryer or a heavy-bottomed pot to 350°F (175°C).
Dip each shrimp into the batter, allowing excess batter to drain off, and carefully place it into the hot oil.
Fry the shrimp in batches, turning occasionally, until golden brown and crispy, about 2-3 minutes per side.
Use a slotted spoon or a spider strainer to remove the fried shrimp from the oil and transfer them to a paper towel-lined plate to drain any excess oil.
Serve the fried shrimp hot with lemon wedges and cocktail sauce or tartar sauce on the side.
