Ingredients:

1 cup water
1/2 cup unsalted butter
1/4 tsp salt
1 cup all-purpose flour
3 large eggs
1 tsp vanilla extract
Vegetable oil, for frying
1/2 cup granulated sugar
1 tsp ground cinnamon

Instructions:

In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
Remove from heat and add flour all at once. Stir quickly until the mixture forms a ball and pulls away from the sides of the pan.
Transfer the dough to a mixing bowl and let it cool for a few minutes.
Add eggs one at a time, mixing well after each addition. The dough should be smooth and shiny.
Stir in vanilla extract and mix until well combined.
Heat vegetable oil in a deep frying pan or a Dutch oven to 375°F (190°C).
Spoon the dough into a piping bag fitted with a star tip.
Pipe 4-6 inch strips of dough into the hot oil, cutting them off with scissors or a knife.
Fry the churros until golden brown and crispy, turning occasionally for even cooking, about 2-3 minutes per side.
Remove the churros from the oil and drain on paper towels to remove excess oil.
In a shallow dish, mix together sugar and ground cinnamon.
While the churros are still warm, roll them in the cinnamon sugar mixture until well coated.
Serve hot and enjoy!

Note: Churros are traditionally served with a dipping sauce such as chocolate ganache or dulce de leche. You can customize the recipe by adding your favorite spices, extracts, or toppings to the dough or the cinnamon sugar coating for added flavor. Also, be sure to follow safe frying practices and handle hot oil with caution.
