Ingredients:
1 pound ground beef or ground turkey
1 small onion, finely chopped
2 cloves garlic, minced
1 tablespoon vegetable oil
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon oregano
1/4 teaspoon cayenne pepper (optional, adjust to taste)
Salt and pepper, to taste
1 bag (10-12 ounces) tortilla chips
2 cups shredded cheese (such as cheddar, Monterey Jack, or a blend)
Toppings of your choice: diced tomatoes, sliced jalapenos, chopped cilantro, sour cream, guacamole, etc.
Instructions:
Preheat your oven to 375°F (190°C) and line a baking sheet with foil.
In a large skillet, heat the vegetable oil over medium heat.
Add the chopped onion and minced garlic to the skillet, and sauté until the onion is softened and translucent.
Add the ground meat to the skillet, and cook until browned, breaking it up with a spoon as it cooks.
Stir in the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, and pepper. Cook for 1-2 minutes, until the spices are fragrant.
Remove the skillet from the heat and set aside.
Arrange the tortilla chips in a single layer on the prepared baking sheet.
Sprinkle half of the shredded cheese evenly over the tortilla chips.
Spoon the cooked ground meat mixture over the chips and cheese.
Sprinkle the remaining shredded cheese evenly over the top.
Bake the nachos in the preheated oven for 8-10 minutes, or until the cheese is melted and bubbly.
Remove the nachos from the oven and let them cool slightly.
Serve the nachos with your favorite toppings, such as diced tomatoes, sliced jalapenos, chopped cilantro, sour cream, guacamole, etc.
