Ingredients:

1.5 pounds stew meat (such as beef or lamb), cut into bite-sized pieces
1 tablespoon vegetable oil
1 large onion, chopped
2 cloves garlic, minced
2 cups beef or vegetable broth
1 cup frozen peas
1 cup frozen spinach
1 teaspoon dried thyme
Salt and pepper, to taste
Cooked rice or mashed potatoes, for serving

Instructions:

Heat the vegetable oil in a large pot or Dutch oven over medium heat.
Add the chopped onion and minced garlic to the pot, and sauté until the onion is softened.
Add the stew meat to the pot, and brown on all sides.
Add the beef or vegetable broth to the pot, along with the dried thyme, salt, and pepper. Bring the mixture to a boil.
Reduce the heat to low, cover the pot, and let the meat simmer for 1.5-2 hours, or until it is tender and cooked through.
In a separate pot, cook the frozen peas and spinach according to package instructions, then drain.
Once the meat is cooked, remove the pot from heat and let it cool slightly.
Using an immersion blender or a regular blender, purée the cooked peas and spinach until smooth.
Return the puréed mixture to the pot with the stewed meat, and stir to combine.
Place the pot back on low heat, and let the stew simmer for an additional 10-15 minutes to allow the flavors to meld together.
Serve the stewed meat with green purée over cooked rice or mashed potatoes for a delicious and nutritious meal.

Note: You can adjust the seasoning and thickness of the green purée to your liking by adding more salt, pepper, or broth as needed, and by blending to your desired consistency.
