Ingredients:

8 oz (225g) spinach
2 cloves garlic, minced
1/4 cup pine nuts
1/2 cup grated Parmesan cheese
1/4 cup extra virgin olive oil
Salt and pepper to taste
8 oz (225g) pasta of your choice (e.g. spaghetti, fettuccine, penne)

Instructions:

Cook the spinach in boiling water for 1-2 minutes until wilted. Drain and rinse with cold water to stop the cooking process.
Squeeze out any excess water from the spinach and transfer it to a food processor or blender.
Add minced garlic, pine nuts, grated Parmesan cheese, olive oil, salt, and pepper to the food processor or blender with the spinach.
Blend until smooth, scraping down the sides as needed.
Cook the pasta according to package instructions until al dente. Drain and reserve 1/4 cup of pasta cooking water.
In a large skillet, heat the green spinach paste over medium heat.
Add the cooked pasta to the skillet with the spinach paste and toss to coat the pasta in the sauce. If the sauce is too thick, you can add some of the reserved pasta cooking water to thin it out.
Cook for an additional 1-2 minutes, or until heated through.
Serve hot and enjoy your delicious homemade green spinach pasta!

Note: You can also add other ingredients to the sauce, such as fresh herbs, sun-dried tomatoes, or roasted red peppers, to customize the flavor to your liking.
