Ingredients:

8 oz (225g) spiral pasta
1/2 lb (225g) chorizo sausage, diced
1 small onion, finely chopped
2 cloves garlic, minced
1 can (14 oz/400g) diced tomatoes
1/2 tsp paprika
1/4 tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh parsley for garnish (optional)

Instructions:

Cook the spiral pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, cook the diced chorizo sausage over medium heat until crispy. Remove the sausage from the skillet and set aside, leaving the rendered fat in the skillet.
In the same skillet with the rendered chorizo fat, add the chopped onion and minced garlic. Sauté for 2-3 minutes, or until the onion is translucent.
Add the diced tomatoes, paprika, and red pepper flakes (if using) to the skillet. Stir to combine.
Bring the tomato mixture to a simmer and let it cook for 5-7 minutes, stirring occasionally.
Add the cooked spiral pasta and crispy chorizo sausage back to the skillet with the tomato mixture. Toss to coat the pasta in the sauce.
Cook for an additional 1-2 minutes, or until heated through.
Season with salt and pepper to taste.
Remove from heat and garnish with fresh parsley, if desired.
Serve hot and enjoy your delicious spirals with chorizo!

Note: Chorizo sausage can be quite flavorful and salty, so be mindful of the amount of additional salt you add to the dish. Adjust to taste.
